Cherry Walnut Cookies
½ cup (120g) almond butter
¼ cup (30g) oat flour
6 pitted dried dates, soaked in warm water for 15 minutes
¾ cups (60g) shredded unsweetened coconut
½ cup (120ml) unsweetened applesauce
2 eggs
2 teaspoons ground cinnamon
1 teaspoon vanilla extract
½ teaspoon baking soda
¼ teaspoon sea salt
2 tablespoons dried dark cherries
2 tablespoons chopped walnuts
Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone mat.
In a food processor, combine almond butter, coconut flour, and dates and process for 1 minute, until well combined and dates have broken into really small pieces. Add coconut, applesauce, eggs, cinnamon, vanilla, baking soda, and salt and process for 30 seconds, until a wet dough forms. Add currants, cherries, and walnuts and pulse once or twice, until fruit is coarsely chopped and incorporated.
Using a cookie scoop or two large spoons, drop dough on to cookie sheet and bake for 20 minutes.
